When you think of making rice as a side dish for your meal it is often just the standard boring plain old rice. But not in this case! This recipe for tumeric and cashew spiced rice is the most wonderful alternative to your regular rice side dish.

This recipe will also surprise you because it is quick and easy. It involves no pots! The tumeric and cashew spiced rice is made from start to finish in the microwave. I always make my rice like this. It is super easy and I never have to dirty a pot. Also, the rice is perfectly cooked every time. And I don’t even need to be there whole it is cooking.

The beautifully fragrant tumeric and cashew spiced rice can be served as an accompaniment to many meals. This rice recipe is a beautiful blend of soft rice together with crunchy cashew nuts. I garnished my rice with coriander but feel free to use whichever herb that you enjoy best.

Tumeric and cashew spiced rice

 

1 cup regular rice

1 tsp tumeric powder

1 litre boiling chicken or vegetable stock

 

method

 

  1. place all the ingredients into a microwave proof dish and microwave on high for 22 minutes
  2. drain any remaining liquid in a colander at the end of the cooking time
  3. garnish with the cashews and coriander (or any herb of your choosing)
