Welcome back to Sandtondiet and to this week’s recipe. This slow cooker whole roast chicken recipe was one of those recipes that I just didn’t believe was possible. So needless to say I had to try it.
I’m having an absolute love affair with my slow cooker at the moment. I just love the idea of dumping everything into one dish and then leaving it to do it’s thing. My favourite part is arriving back in my kitchen at the designated time only to find that dinner is cooked. And to top it all off I had very little input!
This whole roast chicken was made with a beautiful spice rub blend. The spice rub is a combination of fragrant spices which blend together beautifully. This combination of spices gave this chicken an absolutely gorgeous flavour. To top it all off, my whole family loved this dish.
Quite a few of the slow cooker recipes that I have read say to take the chicken out of the slow cooker and place it under the grill for a few minutes. I didn’t find that it was necessary for this recipe. This slow cooker whole roast chicken was fall of the bone tender and browned nicely too.

The ultimate slow cooker whole roast chicken
1 tsp cumin
1 tsp salt
1 tsp ground ginger
½ tsp onion powder
¼ tsp ground cinnamon
½ tsp dried ground coriander
2 Tbsp sugar or stevia granules
1 Tbsp canola oil
1 x whole chicken (about 1.5kg)
½c chicken or vegetable stock
5 baby potatoes, halved
1 large carrot, sliced
2 purple onions, cut into wedges
- Combine the spice rub ingredients together and mix them to combine them well
- Spread the oil over the chicken and rub the spice mixture all over the chicken to coat it well
- Place the chicken stock, potatoes, carrots and onions on the bottom of the slow cooker
- Then place the whole seasoned chicken on top of the vegetables and place the lid onto the slow cooker
- Cook the chicken on low for 5 hours or until cooked through and the juices are running clear
