The best ever sweet chilli tofu poke bowl

Welcome back to Sandtondiet and this week’s sweet chilli tofu poke bowl recipe. Tofu is one of those ingredients that is often an enigma to many people. Many people either won’t try it or find it very bland to eat.

This recipe showcases how wonderful tofu can be. It is actually a very versatile ingredient and takes on any flavour that it is marinated in. You can use ginger, garlic, soy, sesame seeds but to name a few. In this tofu poke bowl I have decided to flavour the tofu with sweet chilli sauce. The combination of the hit of chilli together with the sweetness of the sweet chilli sauce is the perfect combination for the tofu.

Before assembling the poke bowl the tofu is seared in a pan to caramelise the sweet chilli sauce. The beautiful charred flavour of the caramelised sweet chilli sauce and tofu is simply wonderful. The tofu is then garnished with scallions and sesame seeds to make for a most wonderful mouthful of tofu.

The best ever sweet chilli tofu poke bowl

 

400g tofu

3 Tbsp sweet chilli sauce

2 tsp sesame oil

1 cup sushi rice per person

2 Tbsp julienne cut cucumbers per person

2 Tbsp julienne cut carrots per person

¼ avocado, sliced

Scallions/ spring onions, sliced (garnish)

1 Tbsp sesame seeds per person (garnish)

 

Dressing

¼ cup low sodium soy sauce

2 tsp honey

2 tsp sesame oil

 

Method

 

  1. Slice the tofu into thick slices and spread the sweet chilli sauce over the sliced tofu
  2. Place the tofu into the fridge and marinade for a few hours
  3. Place the 2 teaspoons of sesame oil in a non-stick pan and sear the tofu slices until you achieve an almost charred look (use an egg lifter for this so that the tofu doesn’t break up into small pieces)
  4. Once the tofu is nicely cooked and slightly charred remove it from the pan and set aside
  5. To assemble the poke bowl begin by placing the rice at the bottom of the bowl
  6. Place the cucumber, carrots and avocado on top of the rice
  7. Cut 1 – 2 slices of the tofu into small cubes that are placed next on top of the rice
  8. Garnish each bowl with scallions and sesame seeds
  9. Combine the dressing ingredients and pour a bit over each of the poke bowls and enjoy!
