Cucumber pickle recipe
2 large English cucumbers
1 Tbsp salt
2 bay leaves
1 tsp dill
1 tsp garlic
1 – 2 tsp sugar
3 cups water
¾ cup white vinegar
2 tsp mustard seeds
- Slice both the cucumbers into thick rounds and set aside
- Combine all the ingredients for the pickling liquid together and mix well
- Place the cucumbers in a glass jar large enough to hold the cucumbers and the liquid, making sure that the jar and the lid are clean and sterilised before using them
- Pour the liquid over the cucumbers and allow the flavours to infuse overnight in the refrigerator
