sugar free lemon cake

Welcome back to Sandtondiet and to this week’s sugar free lemon cake recipe. Every now and then I get a bee in my bonnet to modify a cake recipe to make it sugar free and lower GI. This lemon almond cake was a real hit.

The cake has a wonderful lemony zing and a lovely nutty undertone. I served this on a Friday night and it was a great success with my guests. They really appreciated the fact that the cake was sugar free.

This sugar free lemon cake recipe makes a loaf and 6 extra muffins. It doesn’t really matter what shape you cook it in, you may just have to adjust the cooking time. My muffins took 25 minutes to cook and the cake took 60 minutes to cook.

I served this lemon cake as is, but it would also be lovely served with honeyed ricotta or some strawberries. It is the kind of cake that is very versatile and can be paired with lots of other accompaniments.

Aside from this lemon cake recipe I have plenty healthy sweet treats on my blog that are sure to delight. This Quick and easy healthy ice cream is a recipe that I make often because my kids absolutely love it. These Paleo almond and ginger cookies are one of my favourite cookies. They are in fact in my freezer as we speak. The flavour combination in these is so yum!

There are also lots of other healthy sweet treat recipes out there. I’m definitely going to give these flourless almond butter cookies a try. They look delicious and healthy too – https://www.livewellbakeoften.com/easy-flourless-almond-butter-chocolate-chip-cookies/ .

I’m not sure about you but there is something about rice crispie treats that I find so nostalgic. The problem is that they are usually anything but healthy. This date sweetened recipe really appeals to me so I thought that I would leave the link to the recipe here so that you guys can also see if you like it – https://www.feastingonfruit.com/date-sweetened-vegan-rice-crispy-treats/ .

Also just a reminder that if you need healthy recipes for everyday cooking then I have an amazing recipe book just for you. It is packed full of easy recipes that have all been taste tested and family approved. If you would like a copy then just click on this link and it will take you to the shop on my blog where you can buy the book – Delicious Healthy Everyday Recipes .

Well that’s it for today. I look forward to hearing how your lemon cakes turn out. Until next time, Leanne xoxo
