Welcome back to Sandtondiet and to this week’s sugar free lemon cake recipe. Every now and then I get a bee in my bonnet to modify a cake recipe to make it sugar free and lower GI. This lemon almond cake was a real hit.

The cake has a wonderful lemony zing and a lovely nutty undertone. I served this on a Friday night and it was a great success with my guests. They really appreciated the fact that the cake was sugar free.

This sugar free lemon cake recipe makes a loaf and 6 extra muffins. It doesn’t really matter what shape you cook it in, you may just have to adjust the cooking time. My muffins took 25 minutes to cook and the cake took 60 minutes to cook.

I served this lemon cake as is, but it would also be lovely served with honeyed ricotta or some strawberries. It is the kind of cake that is very versatile and can be paired with lots of other accompaniments.

Healthier sugar free lemon cake


Dry ingredients


2 cups self raising flour
1 cup almond flour
1 tsp baking powder
1/2 tsp salt
1/2 cup + 2 Tbsp baking xylitol erythritol blend
Zest of two lemons

Wet ingredients


3 Tbsp lemon juice
4 large eggs
1 tsp vanilla essence
1/2 cup vegetable oil
1/2 cup pureed, canned pie apples
1 1/2 cups plain full cream yoghurt



Combine the dry ingredients and then combine the wet ingredients

add all the wet ingredients together and mix well
Pour the batter into a loaf tin and cook at 180°C for 60 minutes
