This flourless banana muffin recipe was really fun to make. It was quick and easy and healthy too.
There are those days where you really feel like a, bit of a cheat but don’t necessarily want something super unhealthy.
These low carb sugar free flourless banana muffins (phew!) are the ultimate answer. They are packed full of healthy ingredients but won’t cause massive spikes in your blood sugars either.
There are many muffin recipes out there but these sugar free flourless banana muffins are really special. The are soft and moist and you really don’t feel like you are missing out on any of the unhealthy bits.

Sugar free flourless banana muffins
1 3/4 cups almond flour
1/4 tsp salt
2 tsp baking powder
1/4 tsp cinnamon
2 large ripe bananas
3 large eggs
1/4 cup canola oil (or any neutral tasting oil)
1/3 cup chopped Pecans (optional)
1. Mash the bananas until well mashed with no large lumps
2. Combine the rest of the ingredients and mix well
3.Place foil muffin holders into a muffin tin and fill each holder 2/3 full with the muffin mixture
4.Place the muffin pan into an oven that has been heated to 180C and bake the muffins for 21 – 23 minutes or until a toothpick inserted comes out clean
