Welcome back to Sandtondiet and to this week’s spiced tahini cauliflower wrap recipe. This meal is vegetarian heaven in one mouthful. It is substantial, delicious and super easy to make.

This recipe begins by making a whole roast cauliflower in the over. The whole cauliflower is basted in tahini and spices and is then baked in the oven. The result is a delicious and creamy spiced cauliflower fit for the gods.

The next step is to chop up the rest of the ingredients that go together with the cauliflower in the wrap. Feel free to use whichever veggies you like best in this cauliflower wrap. But I will tell you that this combination was an absolute delight to eat.

It is summer in the Southern hemisphere at the moment and there are edible flowers all over the stores here. So I can’t resist putting them in pretty much everything. They just look so pretty!

Spiced tahini cauliflower wrap

 

1 whole medium sized cauliflower

 

Sauce

¾ cup tahina/ tahini (Store bought)

2 tsp paprika

1 tsp cumin

 

Per wrap…..

1 wholegrain, side plate size wrap per person

2 Tbsp tahina/ tahini

6 baby tomatoes

1/3 avocado

2 Tbsp coriander leaves

4 – 5 edible flowers (optional)

Salt and pepper to taste

 

Method

 

  1. Place the cauliflower into an oven proof baking dish
  2. Next mix the sauce ingredients together and spread a thick layer of the sauce over the cauliflower
  3. Cover the baking dish with tinfoil and place it into an oven that has been preheat to 180C
  4. Bake the covered cauliflower for 40 minutes, then remove the tinfoil and bake for a further 20 minutes
  5. Remove the cauliflower from the oven and allow it to cool down
  6. To make the wrap begin by spreading the tahini down the middle of the wrap
  7. Cut florets off the cooked cauliflower and place on top of the tahini layer
  8. Place the rest of the ingredients onto the middle of the wrap and season with salt and pepper to taste
  9. Fold the wrap up into a cigar shape and enjoy!
