I’m not sure about you but to me there is something so incredibly comforting about a scratch made homemade chicken soup. The combination of flavours in a good chicken soup just seem to evoke feelings of healing and comfort that can’t really be matched by much else.

There are several variations out there of chicken soup. However today I have decided to keep things as close to authentic as possible while making sure to keep it as healthy as possible. So instead of using chicken bones or whole chicken pieces I just used thinly Sliced chicken breasts as well as the standard chicken soup ingredients. So I used onions, carrots, celery and bouquet garni as the base for the soup.

I will admit that I was a bit sceptical about the outcome of this soup. Usually chicken soup is made using much fattier pieces of chicken and I wasn’t sure if the  flavour could be matched. I also shortened the cooking time to 2 – 3 hours because there were no bones or fatty chicken pieces.

I’m sure that you can guess by the fact that this post is being published that the soup was a winner. My family absolutely loved it and actually said that they preferred it to the way I usually make it. I also used rice pasta in today’s recipe instead of a thin spaghetti, which was a great alternative.

So not only did this recipe hit all the correct chicken soup spots but it wasn’t an artery clogger either. If you need some other soup recipes then I can offer those too. This Tomato carrot and chickpea soup is truly divine. Or this mexican taco soup is also a wonderfully satisfying soup.

I’m actually not the biggest fan of soup. The soup has to be rely good for me to even want to try it. The soups that I posted obviously fit the bill but there are some other bloggers who also have some soup recipes that look great. One of my favourite soups is butternut soup. It has beautiful fresh and clean flavours and should pack a flavour punch!

The most outstanding healthy chicken soup

 

2 Tbsp canola oil
750g thinly Sliced chicken breasts
200 celery sticks, finely chopped
100g carrots, finely chopped
1 large onion, cut into wedges
2 bouquet garni
4 bayleaves
1 tsp fresh crushed garlic
5 tablespoons chicken stock powder
5 litres water
1 cup rice pasta

 

Method

 

1.Heat the oil up in a large pot
2.Add the chicken breasts and brown until there are flecks of brown on the fillets
3.Add the carrots and celery and continue to saute for a few minutes
4.Next add the rest of the ingredients, except the pasta, and allow the soup to simmer for 2 – 3 hours
5.Once cooked, remove the onions, bouquet garni and bay leaves from the soup
6.Shred the chicken in the soup so that you have fine pieces of chicken in the soup
7.Cook the rice pasta according to the instructions on the packet
8.Once cooked, drain the pasta and add to the soup
