Welcome back to Sandtondiet and to this week’s mozzarella and olive salad. Do you ever find that the salad recipes you have are a bit boring. And if they are not boring you have made them so many times that you just can’t face the same salad again?

Well this salad is the solution to your problems. It is quick and easy to prepare and was absolutely scrumptious to eat. Moreover, I plated the salad on a wooden board in a platter kind of style and it was magnificent to look at too. So the next time you feel like serving a show stopper of a salad, this is the recipe for you.

This mozzarella and olive salad is a simple combination of ingredients that pack a flavour punch! I decided to use baby bocconcini mozzarella for this recipe. I used this mozzarella for two reasons. Firstly buffalo mozzarella is possibly one of my favourite foods on earth. Secondly it just looks gorgeous when plated.

 The most sensational mozzarella and olive salad you will ever eat

 

10 baby rosa tomatoes, quartered

5 baby cucumbers, sliced

10 green olives, pitted and sliced

5 bocconcini mozzarella balls (or small buffalo mozzarella balls)

A few slivers of purple onion

1 tsp garlic and herb seasoning

Salt to taste

1 Tbsp olive oil

2 Tbsp red wine vinegar

 

Method

 

  1. Place the tomatoes, cucumber slices, olives, and mozzarella balls on a platter
  2. Season with the garlic and herb seasoning as well as with the salt and pepper
  3. Drizzle with the olive oil and red wine vinegar and your salad is ready to serve
