Welcome back to sandtondiet and to this week’s Mexican taco soup recipe.

I have to confess that soup is not my favourite meal unless it’s really different and delicious. So I’m sure you can guess that this soup is really good.

This Mexican taco soup is also jam packed with healthy goodness. The tomatoes are full of lycopenes, the corn is loaded with cholesterol lowering fibre and the beans have slow release carbohydrates in them for good blood sugar control. So you are covering a lot of bases with this bowl of Mexican taco soup.

Mexican taco soup

 

1 Tbsp oil
1 brown onion, chopped
2 tsp taco seasoning mix
2 x 410g cans peeled, chopped tomatoes
500ml chicken or vegetable stock
1 x 410g can whole kernel corn in brine
1 x 410g can red kidney beans, drained and rinsed
Fresh Coriander, chopped (optional garnish)

 

Method

 

1.Heat the oil up in a pot and saute the onion until its translucent
2.Add the taco spice and cook until you can smell the flavours of the spices releasing (1 – 2 minutes)
3.Add the canned tomatoes and stock and allow the soup to simmer for 30 minutes
4.One the soup is cooked, blend the soup with a hand blender
5.Lastly, add the corn and kidney beans and your soup is ready
6.This Mexican taco soup is delicious served with a garnish of chopped fresh Coriander
