23 Sep honey mustard chicken with butternut
There is a reason that honey mustard chicken is a classic combination and that is, that it just simply works well together. I has almost forgotten about honey mustard but I’m glad that I’ve rediscovered it because it really is delicious.
There are quite a few commercially available honey mustard sauces but I really find that the fresh homemade version is just so much better. The lovely sweet Mustard together with the zingy Dijon mustard are a marriage made in heaven.
I like to cook my chicken for quite a long time and usually cook my chicken for up to two hours. This way the outside goes a beautiful golden colour and it has a lovely crispy outside. I was a bit worried that the honey might burn with such a long cooking time but it turned out perfectly.
The butternut squash was the perfect accompaniment to this meal. I put them into the oven at the same time and really didn’t have to do much other than turn it. I absolutely adore butternut and I also like to cook it for a long time until some of the corners get slightly charred.
The combination of the honey mustard chicken and the butternut squash were a fabulous combination. This was a really easy meal to put together and it really delivered in the flavour department.

The most outstanding honey mustard chicken and butternut
1 whole chicken (about 1.5kg)
Honey mustard marinade
1/4 c honey
1 Tbsp dijon Mustard
2 tsp chicken spice blend
1 tbsp canola oil
500g ready chopped butternut
1 Tbsp canola oil
1.Place the chicken in an ovenproof dish
2.Combine the marinade ingredients and rub all over the chicken
3.Cover the chicken and allow the chicken to marinade in the fridge for a few hours
4.Preheat the oven to 180°C and place the chicken in the oven, uncovered
5.Cook the chicken for 1 1/2 – 2 hours or until golden brown at cooked through
6.At the same time, place the butternut cubes into an oven proof dish and drizzle with the oil
7.Place the dish into the same oven as the chicken and cook for 1 – 1 1/2 hours or until golden brown and slightly charred
8.Turn both the chicken and the butternut once or twice during cooking so that they cook evenly
