This healthy clean eating asparagus quiche was a brilliant experiment. The delicious filling and crispy crust ticked all the quiche boxes.
Let’s face it, who doesn’t love a good quiche. The problem is that they are usually loaded with carbs and fat. This low carb clean eating asparagus quiche is a wonderful take on a regular quiche. To be honest nobody even commented on the fact that it tasted different.
I absolutely love trying out new dishes and recipes. The only issue with this is that you do sometimes end up with a monumental flop. This was not the case with this healthy clean eating asparagus quiche. It was a resounding success on the first try. You really should give this one a try!

Clean eating asparagus quiche
CRUST
2 cups almond flour
1/4 tsp salt
1 jumbo egg
2 tsp coconut oil
FILLING
4 jumbo eggs
2 egg whites
250g low fat smooth cottage cheese
1 1/2 tsp chicken stock powder
2 Tbsp potato flour
350g bottle asparagus, drained
1/2 – 3/4 cup finely Grated cheese
Method
To make the base
1.Mix all the ingredients for the base together until it forms a cohesive ball
2.Press the dough into the base of an oven proof dish until the pie crust layer is spread in an even thickness in the dish (it should go about a third of the way up the sides of the dish)
3.Bake the base at 180C for 12 – 15 minutes or until its starting to go slightly brown
To make the filling
1.Combine the whole eggs, egg whites and cottage cheese and Whisk until smooth
2.Add the chicken stock powder and potato flour and Whisk again until there are no lumps
3.Chop the asparagus into pieces and lay them on the pastry base
4.Pour egg liquid mixture over the asparagus pieces and sprinkle with the grated cheese
5.Bake in an oven that has been pre-heated to 180C for 55 minutes or until golden brown and cooked through
