Healthy and easy Mediterranean lentil salad

Welcome back to Sandtondiet and to this week’s healthy and easy Mediterranean lentil salad. This recipes happens to be one of my is one of my favourite salad recipes. It is so quick and easy to prepare but is packed with delicious bold flavours. I often make a big batch of this recipe and eat it for the next few days for lunch. The great thing about this Mediterranean lentil salad is that it keeps for a few days in the fridge and is so easy to pack for lunch.

This healthy and easy Mediterranean lentil salad recipe is a great recipe to make if you have a vegetarian coming over for a meal.  Often if a vegetarian is coming over for a meal, you end up making something separate for them but with this salad everyone can enjoy the same meal or part of the meal.

Feel free to add any extras to this lentil salad that take your fancy. You could add onions, chickpeas or even some chicken for an even higher protein meal. The lentils in the salad are very high in fibre and are slowly released into the system and so don’t cause major blood sugar spikes. Most dietary guidelines recommend including legumes into your diet for this very reason. So I hope you enjoy this super healthy most delicious salad, Leanne x


Healthy and easy Mediterranean lentil salad 


¾ cup dried black lentils

3 cups water (do not add salt)

15 baby tomatoes, halved

½ English cucumber sliced and cut into chunks

10 olives sliced

½ cup fat reduced feta

2 – 3 Tbsp fresh chopped flatleaf parsley




2 Tbsp red wine vinegar

1 Tbsp olive oil

½ tsp salt

Pepper to taste




  1. Bring the water to the boil, add the lentils and cook for 30 minutes
  2. Drain the lentils into a colander or sieve and allow to cool
  3. Add the rest of the ingredients, up until the dressing, to the salad and mix well
  4. Combine the ingredients for the dressing and mix well
  5. Pour over the salad and mix again so that the dressing is well distributed through the salad
  6. Enjoy!
