Blow your mind cabbage and cucumber salad

Welcome back to Sandtondiet and to this week’s blow your mind cabbage and cucumber salad. Don’t you find that you are often looking for new salad recipes? Well I certainly am. Salad can be soooooo boring. So I’m often looking out for new recipes or to create new recipes of my own.

This cabbage and cucumber salad is unbelievably delicious with the zingy dill dressing. I have made this recipe several times already and it has been given the stamp of approval by guests.  This cabbage and cucumber salad is so quick and easy to make but is packed with flavour too.

This cabbage salad recipe is so versatile and can be served as a side for a variety of different meals. I am a real fan of cabbage salad but prefer a vinegar based dressing to the usual mayonnaise variety.

Blow your mind cabbage and cucumber salad


1 medium size cabbage, finely shredded

½ English cucumber, sliced into rounds

1 small purple onion, finely sliced




1/3 cup canola oil (or any neutral oil of your choice)

½ c white vinegar

2 Tbsp granulated stevia

1 tsp salt

1 heaped tsp dried bottled dill (optional)




  1. Combine all the salad ingredients and mix well
  2. Then combine the dressing ingredients until everything is well mixed
  3. Pour the dressing over the salad ingredients and mix well again so that all the ingredients are evenly distributed
  4. Enjoy!
